I'm frustrated. This is the 2nd time my ferment has not gone well. I took sliced cukes and carrots. Added boiled salt water (cooled off), spices/dill, whey...all according to recipe. Put them in separate jars, sat them on my kitchen counter in a corner. (The a/c is on always so the house stays relatively cool). Now, after only 6 days they are mushy looking at mold has grown on the top. What am I doing wrong here??? |

Hi, Dont know what recipe or techniquw you are using, but there is nothing in the mix to acidify the mix to prevent mold, and obviously, not enough salt to do so, either. You have to scald out the jars and utensils and air dry them, too. Finger germs and dish cloth germa are bad for pickles. Maybe you could email me (bottom of this page) and tell me what you are aiming for? Ellen |
