Breakfast for 100 - Egg/Cheese strata

Hi,

I will be cooking breakfast for 120 next weekend - my plan is to serve an egg strata casserole (so I can get it all ready the night before!). Would you mind sanity checking my plans? I've never done this before.

I plan to use the disposable deep 1/2 steam table size aluminum pans (11.75x9.3x2.5 inches) - assuming this is what BJ's has to offer! I haven't bought them yet.

Here's my ingredients - I have a recipe (which I have not tried) which calls for a 9x13 pan and serves 12. I have multiplied it by 12.

Breakfast Strata - Recipe for 120

10 pounds veggies (use for half of the stratas)
5 cups scallions/shallots
1 pound unsalted butter/good margarine
10 qts half and half
10 doz eggs (120 eggs)
10 tsp. salt
120-150 1/2” slices of supermarket French bread
120 oz sharp cheddar (with some gruyere if I can afford it)

Question - How many pans will I need?
and how many people will one of these pans feed?
Do I need to cook this in a water bath?

Please see the thread called "Do it yourself brunch for a crowd" from last August for help on quantities and TESTED recipes. It is tempting fate to use untested recipes for a large crowd.

The pans you are planning to use hold about the same as a 9x13 pan. You will need several ovens to do all the dishes in the morning.

Thank you - I'll check iout that thread. I do have a food service size kitchen to do this in.

The pan advice is very helpful.
