making soya/ vegan mince

Does anyone know how to make soya mince or any other type of vegan mince from either soya byproducts or any other bean/ grain? Here in the UK, it's very expensive ($6 for 250g, complete with loads of non recyclable packaging), so I am trying to find an alternative. I tried a recipe which involved dehydrating okara (20 mins in an oven cooling from 200) but the result was either hard and gritty or too soggy. Any comments/ thoughts greatly appreciated. Great site - I finally got the hang of making tofu from your instructions!

If you make the unchuck roast and grind it, you will have a great hamburger type product with excellent texture.

Kate, you should go to Tesco, where you can find soya mince in their speciality/health section. Its about £1 for 375g package. I use about one third of a pack with lots of veggies for two meals worth of finished product for my hungry family of five.
Great site Ellen, it's invaluable to help me plan my wedding party, nothing like this in the UK.
