We are going to Sams on Tuesday to purchase the food for our reception on 9/15, and I am still unsure about how much to purchase. There will be 90 people attending (75 adults and 15 children) We are serving appetizers at our reception from 6:30 to 8:30 pm and I will have access to a full kitchen. We eloped, so the reception is not following a ceremony. So, we are not planning on feeding the people dinner. We are having light appetizers and then a dj. We are having cheese straws (which I already have prepared approx. 500- hope that is enough). We are also having a vegetable tray, a fruit tray. Also, a cheese tray with crackers, meatballs, bite-size chicken skewers, and bite-size pork tenderloin skewers. On Tuesday we are purchasing: cheese, meatballs, chicken, and pork tenderloin For the cheese (I think 2 lbs of 3 different kinds in slices to equal 6 lbs of cheese- 240 slices), the crakcers come in 2 lb boxes/ 300 crakcers- so 1 box, or 2?? Meatballs- 6lbs bags so I was thinking 3 bags (18lb total) Chicken and Pork- the skewers will be approx. 1 oz a piece, my neighbor is a butcher and has offered to cut the chicken and pork. Was thinking about getting 10-15 lbs of each. So that would be- 36 lbs of meat/ 6lbs of cheese, plus veggies, fruit, and the cheese straws and crackers. We will also have a wedding cake. Is that enough, too much?? This is the first time I have ever done anything on this large of a scale and don't want to run out of food or have a huge amount to leftovers..

This menu is heavy to meat, which people like, but if it were me I would get one or two of those giant jars of marinated artichoke hearts that Sam's has, a large jar of roasted peppers, a jar of dried tomatoes in oil and some pitted black olives and chop it all into a great bruschetta type spread. Add the cream cheese logs. Then add 4-5 pounds of baguette (French bread)and cut the meats to 12 pounds meatballs and 10 pounds each pork and chicken. Brine, marinate, or teriyaki the chicken so it does not get too dry. Brush the pork with an apricot jam or pinepple jam glaze or a good BBQ sauce. |
