Here is a simple way to do the proportions- for each 5 people:

Shrimp and Crab Creole

Submitted by Caroline Eickenhorst, her mom's recipe
Makes: 6 servings
Prep Time: 30 minutes
Cook Time: 1 hour, 0 minutes
Ready In: 1 hour, 30 minutes

2 pounds Shrimp
2 cans Crab meat (2 cups)
OR you can use 4 cups ready to cook peeled shrimp alone
1 cup onions chopped
1 cup celery chopped
1 bell pepper
1 clove garlic
1 cup water
3 cans tomato sauce 24 ounces
1 can Rotel tomato (diced, seasoned, stewed) #2 can, 14 ounces
1 1/2 stick butter or mixed oil
1/2 cup parsley
1/2 cup green onions (scallions)
black pepper and cayenne, bay leaf and basil to taste
salt to taste
6 cups cooked rice

Saute in oleo until tender, celery, onions, garlic and pepper. Add the tomato sauce, rotel tomatoes and a little ketchup and water. Cook 30 minutes.
Peel and shell the raw shrimps, add shrimp & crabmeat, parsley, and scallions, and seasonings to taste. Cook 20 minutes more. Serve over rice.

PS I added most of the seasonongs. I use part olive oil and do not use the ketchup!
