how can i cook 40# of rigatoni without the sauce a

ellen,we are planning a fundraiser with about 300 people. i've cooked about 4 roasters full of
sauce. i know i can cook some of the rigatoni ahead. is it best to boil it, drain it , and oil it? then can i just run it under hot water and pour the sauce on?

the other option is to cook all the rigatoni,drain it, oil it and put in large pans in a warm oven with saran wrap and foil over it to keep warm. maybe spritz with water before putting the sauce over it. please let me know which way you think works out better.
