Hi, I'm making chinese chicken salad and zucchini bread for 50 adult men. Wanted to keep the menu simple and it will be a hot day, but I'm concerned that I have enough to feed everyone. I've looked on your big pots page re salads -- should I cut the caesar salad in half for the lettuce, and how much chicken do you think I should cook? |

That is just right on the lettuce. You want 6-8 ounces grilled ready to eat chicken for each man, that is 1 cup, and it takes 1 pound of whole chicken to make 1 cup of meat. If it is a chopped salad, use turkey- easier to prepare, and more taste per mouthful. Just don't make an issue of it, and no one will notice. Don't underestimate the bread- they will eat about 1 loaf for each 3 guys. Prepare a couple of pounds of whipped honey butter for a nice treat- |

Thanks so much for your response. I love the idea of using turkey, and would have no hesitation if it were any other kind of chopped salad. However, chinese turkey salad seems a bit odd to me. I might try it out tonight and see how it tastes. I was going to use whole chickens and cook them in the crockpot and on the stove and then shred them. By your calculus, it seems I would need about 10-12 whole chickens, if I do chicken (it will probably be more like 45 men, not 50). Does this seem right? It seems like an awful lot to me. I'd better get going on those zucchini loaves - yikes! |

OK, you can do fine with 6 ounces, which is 3/4 cup, if this is the salad that has almonds water chestnuts chop suey needles, etc. That means 10 chickens would be ample. That is only 40 quarters, and any guy can eat a quarter chicken. |

Thanks so much for your help, Ellen. I'm going to do as much chicken as I can and if I don't have enough by mid-day tomorrow (the day b/4 the event), I'll just supplement with turkey. You're right, no one will notice. These are guys, after all. :-) This would be so much easier with a commercial kitchen (sigh). |

Not sure why this question is in the chicken salad thread. The recipe in the pulled pork thread, currently dated 6/14, is the best Ive got. You want to do about 65 pounds (8 recipes)of pork for sandwiches, add another for plates. |
