Dear Ellen, How much chicken salad and egg salad will I need for 200 (I'm using party bread It's about 2inch by 2inch). And do you have any cheap Ideas on wedding receptions my menu is cake,punch,chicken & egg salad, pickles, ham roll ups(on ritz's crackers),vegetable tray, fruit basket, and dip,waffer rolls(choc.& van.),cheese ball, pineapple cheese ball,what else can i add that is not costly? If I have alot of different things i'm hoping it will hold out. |

The most important thing for the budget is to schedule the wedding for 1 PM or 7 PM, so people eat before they come and you need appetizer amounts (about 1 pound per person) instead of meal amounts ( 1 1/2 pound or a bit more per person). This menu would be fine for an afternoon reception if you add an assortment of cookies and bars (in addition to the wedding cake) with 4 pieces per person- small cookies and bars, 2-3 bites each. You make these every weekend between now and the date and freeze them. You want to see the info on the sandwich event page and the tea party pages for the quantities you asked about and for ideas. Of course the fruit tray page and the veggie tray page will help with those, and the appetizer planning page. Cheese logs/balls, you want about 8 pounds per 100 people. |
