Quinceanera Food for 200 people

Hello,
I'm making barbacoa, macaroni salad, and borracho beans for my daughters quinceanera for 200 people.

The macaroni salad we make has celery, black olives, bell peppers, mayo, salt and pepper.

How much of of each item do I need for the macaroni salad and how much dry macaroni do I need to purchase?

I make between 6 and 8 pounds dry pasta per 100 for pasta salad, depending on whether here are any other starchy salads or side dishes. Since there are teens, go with 8 pounds per 100.

Per 100, about:
1 cup olive oil, fruity (coat mac after cooking)
10 pounds celery and bell pepper
6 cups green onions with tops, thinly sliced
2 1/2 quarts black olives, sliced, drained
4 cups parsley, leaf only, chopped, Italian flat leaf preferred

about 3 quarts mayo, I add 2 cups mild vinegar.
