Dear Ellen,

My church is hosting a homeless shelter for approximately 230 individuals for two weeks. I am responsible for one of the dinners during that time frame. We plan to serve tri-tip steak, scalloped potatoes, green beans with almonds, salad, rolls and assorted cakes and pies.

I used your measurement guidelines for all of the above, but I am getting a little concerned about my calculation for the tri-tip. I figured that we need approximately 90 lbs of uncooked meat. Could you please verify that for me as I would hate to be short on meat for the guests?

I forgot to mention that the food will be plated when served. No self-serve.

90 pounds for sure, I would probably go for 105. Cook by low and slow to minimize shrinkage and also let stand at least 15 minutes after cooking before slicing.

Also, do plan on at least 40 pounds of potatoes per 100- that is 2 elec roasters- each needs a separate elec circuit.
