Pasta Chicken w sun-dried tomatoes and mozzarella

Am serving this at a wedding shower for about 45. The shower is not at my home so I'll be transporting this and will be serving from a chafing dish. What is the best way to keep it from drying out. The sauce consists of 1 cup mozzarella cheese and 1 cup half and half with pasta water to thin out if necessary.

This is basically an alfredo, and they don't transport too well. The alfredo style sauce on my spaghetti page holds better, please take a look at it.

Remember that it takes about a half hour for the chafing dish to get safely hot enough and consider heating the sauce, reheating the pasta and assembling hot at the venue, rather than transporting already mixed, while the chafers heat. You will need at least 2 full chafers, so you will be holding some on site anyway.
