I'm planning on cooking prime rib for Christmas dinner at my moms this year (usually do it here). Problem is she likes to eat early and with the kids I can't get there early enough to start it. Is it possible to start it at my house in an electric roaster and take the whole thing with me?

Dangerous physically and food safety wise. What I would do is take/send the roaster and the roast to mom's house day ahead along with a heavy duty appliance timer (they cost 8-12 dollars) and set it up to turn on at the necessary time. Or possibly have someone there turn it on. Remember it can safely stand for an hour after cooking before it is served.
