Yes, you do need help, you are talking about over160 pounds of dressing! You want to end up with 3/4 cup (5-6 ounces as served) per person if there are no potatoes, about 1/2 cup per person if there are potatoes.

Here is a basic recipe for about 25 pounds, about 75 servings:

3 pounds celery
3 pounds onions
1 pound butter
sauteed together
3 1/2 pounds (about 2 gallons) bread
3 1/2 pounds cornbread
about 1/3 cup poultry seasoning, 1 tablespoon pepper
broken and allowed to sit out overnight; you can use a dry mix by weight for these
5 quarts chicken/turkey broth
10 eggs
mixed together before adding

1 hour at 300 convection, or 325

You are going to want about 2 gallons gravy per 100.
