graduation party menu amounts

We're planning a high school graduation party from 3-7pm on a Sunday. We're expecting 150-200 people (mostly teens and adults) to stop by during that time. There are other graduation parties going on that day, too.

We are planning these amounts:
150 pieces of fried chicken (breasts, legs, thighs)
150 pulled pork sandwiches
25 pounds coleslaw
25 pounds potato salad
**50 pounds of another side (help! I don't think we ordered enough coleslaw or potato salad and I'm trying to remedy that)
watermelon slices (100 lbs watermelon)
veggie trays: 8 lb carrots
4 lb celery
8 cucumbers
3 qt cherry tomatoes
10 peppers (green, red, yellow mixture)
3 heads broccoli
2 heads cauliflower
dip for veggies (20 cups)
12 pounds chips
15 2-liter bottles soda
15 gallons lemonade
ice water
1 sheet cake
100 brownies
200 chocolate chip cookies
75 oatmeal cookies

I'm not sure if this is enough food! Advice welcome! :) Thanks so much!

200 is different from 150, so I am estimating for 150. Increase if you really think there will be more, or plan for back up delivery pizza!

150 pieces of fried chicken (breasts, legs, thighs)

Both fine and probably OK for 200

25 pounds coleslaw- need 4 gallons
25 pounds potato salad- need 6 gallons- way short

Easiest to make at home, can be done ahead- pasta salad with rotini or bow ties- about 9 pounds pasta and add-ins, many recipes this site

veggie trays:

12 pounds chips-OK
add 12 pints assorted dips and salsas for chips

15 2-liter bottles soda
15 gallons lemonade
ice water
Beverage planning page has info on selection of sodas. Maybe add 3-4 gallons unsweetened tea?

1 sheet cake- serves 60
100 brownies- serves 25
200 chocolate chip cookies- serves 50
75 oatmeal cookies- serves 20
I would definitely get a 2 layer sheet cake
