Hi Ellen: have been reading through your suggestions for college grad parties. I am a personal chef and caterer but have never done anything this big.....can you tell me if I am on the right track.

appetizers:
125 mini crab cakes
125 quesadillas
100 crudités with 2 quarts of dip
10pounds chicken for sandwiches
10 pounds filet for mini sandwiches
8 pounds roasted veggies for mini sandwiches
8 pounds Szechuan noodle salad
8 pounds green bean and tomato salad
10 pounds potato salad
mixed green salad
10 pounds fruit salad

thanks Ellen. I found it. I did mention in the header that this was an open house for 4 hours for 60-75 people.....any changes I should make?

Hi, Chris,

I looked over my notes, and they look about right- suggesting you up the potato salad, tenderloin and shrimp, cut the green salad; sesame noodles, fruit OK. Occurred to me you could turn the shrimp into a shrimp dip and not have to increase the amounts so much.

thanks so much Ellen. this is a big help. I agree about cutting some of the salads out. But this client is insistent on a lot of variety. she won't budge.....I will definitely use your site again.

You don't have to eliminate the green salad, just reduce the amount. Good luck.
