When buying raw meat what is the rule of thum for bone-in and boneless meat per person?

3 1/2 pinces cooked is a modest prpryion, 6 punces cooked is a goliday portion and caterers generally allow 8 oubces cooked when two or more meats are served huffet style, as most people take all,

Due to bone and cooking shrinkage 1 pound bone in raw only makes about 2 modest 3 1/2 to 4 ounce serving. Boneless makes sbout 3.

Exception is ground meat. 70 percent lean shrinks 40 percent or more, but 93 percent lean only about 10 percent.

Ither exception is spare ribs or seanding rib. Bots ot bone, 1 pound per person minimum, Whole raw pig 1 1/3 to 1 1/2 pound.

Xhrinkage on raw meat is around 40 percent.

Depends on whethjer it is cocjtails or dinner. A 7-9 pounder would do for cocktails, but 12 or more for dinner.

This is not a very tender roast, it really looks better than it cooks. I would use a moist heat or potroast type recipe or large crock pot. It should be enough, but don't expect much left over.

How much ingredients for a taco salad bar?
I am thinking about serving a taco and baked potato bar for my son's rehearsal dinner. We are expecting around 50 people. How much taco meat and ingredients to make the taco meat. Also, how many potatoes would you bake. Some of the toppings could be used for both.

I cook for a fraternity. Usually I'm feeding fifteen boys. When buying meat I have been trying to go on the idea of 1/2 lb per boy. Does that sound approxmiatly correct?

Yes, for raw boneless. When I cooked for a frat, I noticed that they ate about twice as much rice, potatoes, vegetable casseroles as older adults. You will save money if you serve homemade rolls or bread and real butter with dinnere. the Kings Cake recipe in the dash of section, which is mixed in a bread machine and makes 4 regular loaves or abour 30 big rolls is excellent, and the angel biscuits recipe is VERY easy and versatile.

When making hamburgers, you have to allow 2 per person. Grating in some onion and just a little bread crumb (1/4 cup per pound) and using regular 70% burger will give you the juiciest burgers.

I will be serving meat and cheese trays as well as fresh fruit and meatballs at my wedding in the spring. I am trying to plan how many meatballs to make. What is the rule of thumb regarding meatballs? and if I am serving meat and cheese and fruit will I have to make as many. I plan to have about 150 people at my reception. Thank you,

Because people basically love meatballs, like hot wings, you have to allow about 3 per person even with the other items. They do freeze and reheat very well.

Use the same numbers per person as for the baked potato bar, as long as it is a mixed crowd. For all teens/jocks, double the meat.

About 18 pounds raw, but may I suggest you get some extra packages of legs? Kids LOVE legs, and it leaves more breast for the grownups. With extra legs, you can go for a 12-14 pound turkey, a very easy cooking job. Count each kid as 1/2 person for quantity tables on my site- you would not go wrong using 1/4 of the amount for 100.

These guys eat just about double the amounts of adults. If you have heavy side dishes, allow at least 2 pounds for each 5 guys. If light sides, 1 pound for each 2 guys.

Lad, buy at least 1 pound for each 3 people. Quarter chicken is fine- chicken is not too expensive, either.

Madeline, since there are other entrees, allow 3 ounces deli sliced meats and 1 1/2 ounces sliced cheeses per person.

Mindi, see the sandwich event page. The hardest decision is how much of each. I would figure how much if it was all one, then use 60% of the amount for each- when there are multiple meats, people tend to eat some of each, and more all together.

Amber, tritip is nit an inexpensive dish, you need 1 [pund raw for each 2 people, or at least 2 pounds for 5. Consider smoked brisket. For chicjen, 1/4 chibken per person- that is close to a pound raw bine-in.

Hi, Nancy,

You will find excellent numbers in the plan for 100 pages, with some cautions. For example for 100 people you need a little over 80 pounds of quaters but only 65 pounds of mixed chicken pieces. Allow 1 pound skinless boneless ham for each 4 people plus abou 1 piece of chicken. Red potatoes, 35-40 pounds per 100 persons, so 55-60 pounds. Salads are listed in the plan for 100 page.

Joyce, are you sure this is a tri-tip? They are usually not nearly so big. It sound like it might be rump or top round? They cook differently.
You can cook, slice and freeze, but it will be more like BBQ than a roast- you do lose something in the saucy re-heating.

For a pot roast type meal, 50 pounds raw boneless chuck. If sliced top round or rump roast, slow cook it and have it presliced with someone to serve- or else add another 10 pounds.

The rule of thumb for total salad/bean sides is 1 gallon for every ten people. I usually allow 3 1/2 to 4 gallons potato salad (about 35 pounds of raw potatoes), plus 3 gallons of beans plus 3 gallons of green salad or slaw for a nice mixed hungry bunch. You would use 1/2 to 2/3 that amount, depending on the actual number and hunger of the crowd you expect.

Get the roast beef very thin sliced, use a smallish roll, allow 1.2 per person (5 people per pound deli sliced ready to eat beef). For the sloppy joes, smallish rolls, 1 per person. That is about 75 regular servings, so you will want about 15 pounds of hamburger.

tami I allow 1 burger (4 to the pound) PLUS 3-4 ounces brat, smoked or Polish sausage per adult, so if it is just burgers you want at least 2 pounds regular hamburger for each 5 people for grilling. The salads are all covered on the plan for 100 button at the top of the cook talk main page.

Michelle, if you are having plantey of grilled red and green bell peppers and fresh onions mixed in with the meat, you can get away with 2 pounds lean raw boneless for every 5 persons, but if not, do allow 1 ppound for every 2 persons.

Phyllis, depending on whether it is dinner entrees, for sandwiches or for appetizers, the amounts vary. Look on the plan for 100 page for dinner entree amounts and potato salad quantities, the sandwich events page for sandwich meats and condiment amounts and the appetizer planning page for appetizer guidance. In general, allow at least 4 ounces of lean, deli sliced, ready to eat ham PLUS 3-4 ounces of meatballs as a baseline. If you do an estimate and post it, I will check it for you.

Hi, Velma,

The problem with 12-3 is many people will come to eat lunch. If you choose 1-4, you will use only about 2/3 as much food, and you could do it with an afternoon tea theme, which is lovely and not very expensive. What do you think?

If you decide on the lunch time, you use 1/2 of the amount you would make for 100. All the items are covered in the various planning pages (buttons at the top of the main cook talk page), and do read the appetizer planning page for the discussion about quantities and timing.

We are having a party for about 50 people, mix of adults and children, we are serving roast beef sandwiches (deli), Mostacoli, and chicken. Also, 3 salads, 2 jellos and multiple appetizers and deserts. I'm worried that I'm going to have a lot of the main dish left...How many pounds of beef should i get????

I am unsure which main dish you are worried about?

Are you making the sandwiches yourself? If so, the very beef on a platter, rolls/bread separate, and let people assemble their own. That way you refill the platter, keeping the extra in the fridge, and it can be frozen or reused if left over.

Some mostiaciolli recipes have sausage or meat in them and some are pasta and sauce. If this is a side dish, meatless, 1 pound dry will serve 8. Caterers would allow 4-5 ounces of ready to eat beef for sandwiches (5 ounces plated) PLUS 1 piece of ready to eat chicken per person.

If the pasta is a meat entree, 6 pounds pasta and 10 pounds sausage would serve 60- you probably want half that. Plus 1 piece of chicken per person and 3 ounces deli sliced beef ready to eat per person. You will have some leftovers but not a whole lot- it is quite difficult to hit exactly with three such different entrees.

If you get good rolls, allow one per person as some folks will take them as bread, even without the beef.

These are most yummy if sliced and soaked in sugar water overnight before grilling, or you can do them for 10 hours in a crock pot till they caramelize. About 1 pound per 8 dogs if you are going to cook them down- they really shrink.

Jill, For 35 people, cook 1/3 of the amount for 100. See the lotsa pasta page. Salmon, see the fish quantities on the plan for 100 page.

La, sorry to say you need 3/4 to 1 pound short ribs per person, depending on side dishes, because of the amount of bone and fat in short ribs. Heavier side dishes, beans, potatoes, etc , less meat. Lighter, fruit, green salad, more meat.
When they are the only meat I allow 1 burger and 1 hot dog per person, but I get Polish sausage or kielbasa, much tastier than hot dogs.

I am catering a wedding for about 65 people.
The menu is turkey, roast beef, mashed potatoes and mixed vegies. We will also be having green salad, greek salad and ceasar salad.
How much beef, turkey and potatoes do I have to buy? The last catering that I helped with, we ran out of potatoes and I definitely don't want that to happen to me.

I generally get 35 pounds for 100 for potato salad or mashed, 55 for bakers.
If you have no RSVP on turkey and roast beef, it depends on whether it is plated or self serve. Caterers generally allow 5 ounces boneless cooked ready to eat beef PLUS 3 ounces boneless cooked ready to eat poultry per person. Ad 10% more if it is self serve, unless you have a line server portioning the plates. I have yield tables on both turkey and beef on this site to help you figure out how much to buy.

Sorry I didn't give more info... but I am having a 60th bday party for my mom. So I need to know how much of everything I need to buy. My sides are Pasta and fruit salads. I will have chips and dip, and a few different desserts. That's basically all, so I need to know how many burgers, hotdogs, and chickens to buy. You can use the recipe for bowl of red, a beanless chili, with ground beef instead of chopped.

You want about 1 cup for each 6-8 hot dogs.

Anna, this is a site for amateurs, primarily. Caterers can use chef2chef.com. Pros usually allow5 ounces ready to eat beef (that is about 10 ounces bone in standing ripb, PLUS 3 ounces ready to eat chicken (that is 6 ounces, or one full piece chicken) per person. Assuming that the hors douevres are for just 1 hour before the meal, 12 pieces/items/"bites" per person. About 9mpounds dry pasta for the pasta dish. All these items are discussed in the quantity tables and the various thread- next time, do your own estimates, then post them if you want some feedback.
Nancy, I'm a big believer in having enough of the main dish for everyone; giving kids different food systematically, just teaches them they don't need to try new things, or aren't worthy of the good stuff. For adults, I allow 2 pounds raw tritip per 5 adults; small children, half that, teens the same as adults, tweens, well, in between.

Heidi, brisket is a fatty meat, you need 1 pound raw for each 2 party people you expect to serve, for ribs you allow 1 pound per person, I would increase enough to allow 2-3 ribs per person PLUS 8-10 ppunds of brisket. Unless here are quite a few kids or very light eaters, you will need more- when there are two choices people eat more, and more of each.

For our main dishes we have planned to do ribs, pulled pork, footlong hotdogs, and Hot links. For side dishes we have planned on doing baked beans, potato salad, and chips. I haven't the slightest idea of how much to cook for all this. Could you help by supplying me with some figures of how much of each meat you would prepare. Also would you cook anything else besides what we have already decided on? Anything you can do to help is very appreciated.

Dillon, this is WAY out of the league of my family cooks. Go sign up at chef2chef.com and post on the catering forum. You will get pro help there.

If it is sale/ money raiser, I would add whole pickles, a couple cases of meatless veggie burgers (taste test Morning Star and Boca).

Also, pasta salads are much easier to prepare and store than potato salads and very popular. Consider adding/replacing.

DO be sure you have event insurance for liability. $1 million minimum.

When I prepare a dinner buffet I usually cost out my meat for 3 to 6 ounces for each person.However you need to take into consideration if you are having 1 or 2 meats then I only cost for a total of 6 ounces. 3 ounces foe each type of meat. Also depending on your guests. Men generally eat more than women so thats another factor. Hope that helps.

Just a caution- that is cooked, ready to eat meat- remember that 30-40% cooking loss. Also, I find that whne one of the choices is beef, people often eat a bit more- 4 to 5 of the beef plus 2-3 of the second, on the average.

This will only be 3 pounds once you cook it, so it is pretty small for this size party. It would be OK with plenty of side dishes, or if you did a stew. It is a fairly tough roast- better pot roasted or braised than roasted, and if you do roast, cook on very low heat to help tenderize (225, 1 hour per pound, check internal temp with a thermometer, pull at 150 or lower).

You will want 1/3 the amount for 100 on the plan for 100 page. For example, 6 pounds potato chips for 100, so you will want 2 pounds. About 4 gallons potato salad, so you will want 1 1/2 gallons (which is about 15 pounds by weight). You can get condiments for yur sandwiches on the beverage planning page.

The hardest estimate for this is the meats, because of so many choices. I would skip the hot dogs entirely and plan on 1 burger patty PLUS 1 brat or Polish sausage per person. You will have some left over, but they can be frozen for use in chili or soup later, and this is the only way I have found to make sure everyone in this small a group gets what they want.

Raw bone in ham, it takes at least 8 ounces per person- more if the hams are smaller, as the bone/fat ratio is increased- I allow 2 pounds raw bone-in for every three persons for party meals. Nova, it is usual to serve two or at most three meats with 50 people. With four, unless you have people RSVP, you have to make so much extra to try to guess what folkd will want, that it is just a magnet for waste and trouble.

I also don't know the taste preferences of your community. What I can tell you is that it takes 1/2 chicken, OR 1 pound of pork ribs OR 1 pound of beef ribs, to make a party serving for one person, or 2 pounds raw boneless well trimmed pork roast to serve 3. Hope this helps.

Bonnie, I know it is the week before the wedding, but you MUST tell me the number of people you are serving if you want specific help. In the meantime, I use 6 pounds per 100 people for pasta/mac salad when I am also doing potato salad.

I would remind that 17 pounds brisket is only 35 servings... It is usual to expect that at least 3/4 of the guests will take some beef.

You are potentially short on meats if those are raw weights for the pork and brisket. I would definitely at least double the beef and pork. Assuming the chicken breasts are boneless, skinless, and cook up to about 4 ounces, you are OK but none will be left over.

People will be hungry. It would be a very good plan to add/prepare an appetizer table for that hour between the time the guests arrive and the time the pictures, clothes changing etc finsh and the bridal couple arrives. This could be as simple as a cheese, veggie and fruit board. I just posted a new table on the appetizer planning page that would help with this.

You also need a person not part of the wedding to be with the food while you all go to the wedding. This person would finish setup, put things in the oven or out, start the coffee, etc. The mother of the bride DEFINITELY needs not to be the one doing this- the bride wants you there, not in the kitchen-

Thanks Ellen, I never would have guessed that it would take 9 pounds of dry pasta to make 4 gallons of macaroni salad. Or I'm totally confused on my amounts, which wouldn't be out of the question at this point! At the 1 gallon per 10 person rule we would need 13 gallons total, right? We have 4 side dishes, so I'm figuring we need 4 gallons of each side dish. Do I have that wrong?

Michelle, I have no idea; you don't say how many other guests/ viewers and how long you are planning to serve, what other food is available or what you will charge. All these affect the amount you might sell.

Rebecca, If you were not having the pasta, the salads would not be enough, and I would definitely double at least the cole slaw. 15 pounds of ready potato salad and 10 of ready pasta salad would the usual for this size party.

5 pounds of dry pasta will not leave any leftovers, but for a casserole would likely be enough.

Allow 1 pound raw regular ground beef for each 3 people (1 sandwich per person- teens want 2)and 2-3 hot dogs per person for adults. If it is serve yourself, you need 1 4 ounce patty PLUS 1 dog per person to have enough and give adequate choice.

If this is for grown ups, consider getting Polish sausage or kielbasa instead of regular hot dogs, very little extra expense and much better flavor.

Beverly, what a pleasant party.

Half pigs come in sizes from 18 to 200 pounds... So start by counting every 1 pound of pig for 1 person, and subtracting that number of people from your total.

Baby back ribs, 1 pound raw per person. Chicken is 1/4 per person. With two you have to make extra to allow for choices and because people eat more when there are more choices.

So say your half pig is 40 pounds. You need 45 more served. I would make 6-8 chickens, then cut into pieces, not quarters. I would make 25-30 pounds of ribs.

Here are the amounts for 100 for your items. For 85, you would go about 7/8's.

potato salad, 35 pounds potatoes. Look at the Nepalese or Russian potato salad recipes for some delicious and different ideas.
cole slaw, 20 pounds

I am assuming this is a full meal served buffet style. I would expect 5/6 of the amount invited for this event. Chicken wings are listed in the plan for 100 lists, you need 5/6 of the amount for 100. For full servings, you would get 1 pound raw baby back ribs per person. For this, being ladies and having the wings also, you could allow 1/2 pound raw per person- 40-45 pounds.

Plenty meat. Get equal amount by weight of peppers and onions combined. Use lime juice in the meat marinade. Consider making a half recipe of borracho beans (start today) and 3-4 pounds dry of Spanish or yellow rice. 4 tortillas per person, get some each of corn and flour.

Wedding buffet
Ellen, We are expecting 150ppl at our reception. We are having tri-tip and chicken quarters. Also, pasta salad, green salad, cooked beans, white rice and spanish rice. I am figuring of buying half and half of the meats. How many pounds of tri tip and chicken for 75 ppl each? What would you recommend also in the side dishes as far as how much to buy? These are all being done by scratch by a friend, who is a great cook. Any advise would be appreciated. Wedding is October 18, 2008.

Your plan needs some work. One great cook cannot cook for 150 people- read my article under the "wedding dinner" button at the top left of cook talk. You need 3 cooks at least- if you are grilling for this size group on site, it takes two people (not counting the other cooks) FULL TIME on the grill. Plus six minimum to set up serve and clean up.

It also does not work tp do 75 of each. You need to end up with 5 ounces cooked ready to eat beef PLUS 1 piece of chicken per person (a quarter is 2 pieces). So you need about 45 pounds of raw tritip plus 75 quarters.

pasta salad 6 pounds dry pasta per 100
green salad, see plan for 100, make 1 1/2

cooked beans, 8 pounds dry per 100

white rice and spanish rice. 8 pounds dry total rice per 100, counting both kinds

Please have the cook read the "Wedding Reception menu ideas" thread- the whole thread. That cook was an experienced quantity cook, had 15 helpers for 3 days before the wedding, was NOT grilling, and served only 135; she had success. You/ your cook have a LOT of work to do besides just the food to have success and not much time to do it in.

Tenderloin on rolls is definitely more cost effective than rib roast, as you need only 1 pound per 5 sandwiches (which is about 4-5 people) as opposed to 1 pound per three people. IT MUST HAVE A SERVER, or you will run out.

Charon, I missed yours. The meat is OK for your party. You need 3-4 pounds dry each of rice and beans for this party.

Peggy, there is a yield table for turkey in the holiday cooking section at the top of big pots. However, unless these are children under 12 that is a VERY small serving for a party. 6 ounces is the usual, and that is with nothing left over.

Raqui, 10-12 pounds, try the freezable holdable mashed potato recipe in big pots for one that can be made ahead and reheated.

Millie, 100 pounds- this is a very bony item, and they are heavy.

Mindy, I would probably do 2 12-14 pounders. One 20 pounder would be fine, but the meat is better on the smaller birds.

Good work. You will run out of sweet potato casserole and green bean casserole, and the stuffing is a possible. You will likely have tossed salad left over, just because there are so many other choices- do add at least one light dressing (light ranch). You will probably run out of pie, unless they are large, and you might want to add a couple of cans of real whipped cream. You need water and some kind of sugar-free sweetener, and it wouldn't hurt to have a couple of pots of coffee and decaf available. People like it with dessert.

The meat will do as long as someone serves it and you do not need any leftovers.

Veronica, do you mean beef fajitas and chicken in another dish, or a combo of chicken and beef fajitas?

Depends on the side dishes. If this is fajitas from a single meat only with no rice and beans, about 1 pound raw boneless meat for 3 people, plus 10%. If rice and beans, 1 pound for 4 people plus 10% is usually plenty. For the two meats, you would figure the total for one meat, then get 2/3 that amount in raw boneless beef and a little less than 1/2 that amount in boneless skinless chicken. Yes that add up to more than 100%, but when you have two meats people eat more and some of each.

Miranda, you need to make an initial estimate and post it- use the appetizer planning page, the fruit tray and veggie tray pages- the amounts depend on whether it is at a meal time or mid afternoon, if it is at a mealtime you want a total of about 1 1/2 pounds of food per person- also, consider serving the ham in deli type slices and letting people assempble their own sandwiches, they eat less and less is wasted because the sandwiches can't be saved but the ham and rolls can. If you like that idea, see the sandwich event page for more help on how much bread, meat and condiments. Remember, dip is 1/4 to 1/3 cup per person plus 1 1/2 to 2 ounces of chips. If you post your estimate I will be glad to go over it for you.

Kelly, for your amounts see the plan for 100 page and the dessert planning page, you might also like the bbq and brisket page for some ideas and links. The usual problems with chicken are cooking to hot, to fast, so yo end up with perversely dry, underdone chicken. Good grilled chicken takes a solid hour over a medium to low fire, the secret is really good grill folk and allowing enough time- that is a LOT of grill space- if you have to hold, hold tightly covered at 180 degrees in a preheated oven.

Joyce, there is a condiment list on the sandwich event page that deals with the lettuce, tomato, onion, etc. for 100. Chicken breast depends on boneless skinless vs bone in skin on- see the meat planning chart on the plan for 100 page. But basically, you will need at least 400 pieces and 3-400 burgers to do food for 500 people- folks eat more and some of each when there are several choices.

Baked beans are specified on the picnic sides section on the plan for 100 list. Pies are covered on the dessert list.

Kelly, you have to fully cook the chicken when you par-cook it, and oven roasting is better than boiling. I would also marinate before roasting. If you are NOT grilling, take a look at the orange dijon wedding chicken, which can be made ahead and frozen and is much more Mother's Day-ish than BBQ chicken. Then serve a rice or pasta salad and a spinach strawberry salad instead of cole slaw. Prettier.

See the spaghetti page, look at the pasta dinner for 50-60 and use 1 1/2 to 2 times the amounts, depending on whether they will be light or heavy eaters.

Hello Ellen, Smile!! I would love for u to explain me clearly since we will celebrate our best friend of 75th birthday and will have a buffet after our deaf church to share with our beloved friend. Can u tell me how much pound of bonless rump roast for 40 people or more? I was told that can figure around 5 to 8 lbs of rump and would be enough to feed fr 40 or more people. Help me before I do start to cook these. Would be very apperication. Thanks :-)

If you are serving sliced roast, especially if it is the only meat and buffet service, you need 20 pounds raw for 40-50 people- this shrinks down to 15-16 pounds cooked, which is about 5 ounces per person, which is a very nice party serving. If you have heavy side dishes such as scalloped potatoes or mac and cheese and some hot vegetables as well as the salad, it will cut down on the amount of meat a little, but you still won't have much left over.

It probably won't work out that way. Caterers allow 5 ounces of ready to eat beef PLUS three ounces of the second meat when there are two entrees like this, especially if it is served buffet style. That works out to 1 pound brisket for each 3 plus 1 pound turkey for each 5.

I am serving Spare Ribs, Tri Tip and Chicken for a group of 40 (along with sides). Would you let me know what you think I need of each (raw weight). This will be served buffet style. Also, on the Tri Tip, do you know if it is possible to par cook 3-4 hours aheaad of time and finish off just before serving? Thank you!

Laurie, you double posted, see the other one.

Brian, three meats for 40 people is a tough calculation, see the discussion on the bbq and brisket page. I would do 1 piece of chicken PLUS 1/2 pound ribs PLUS 1/3-1/2 pound raw tritip per person, this is the only way to make sure everyone gets his or her first choice, which you need for buffet service. And no you would be better off cooking done and serving room temp. cold on the beef; tritip is unforgiving and does not take well at all to reheating.

I am having a family seafood day there are 25 adults and 15 kids. How many lbs of catfish do I need will 10 lbs be ok, jumbo shrimp 4lbs, we are also having scallops, oysters. There will be hotdogs and veggies, hamburgers and other food.

Lucky family. That is only about 60 shrimp, I would get at least 3 per person including the kids. With all the other food the catfish should be fine, and you could easily skip either the hot dogs or the burgers.

With a multiple selection, you want to end up with 8-9 ounces cooked weight total meats. I would aim for 4 ounces beef, 2-3 each pork and chicken. Brisket is a fatty meat that shrinks so 2 pounds raw trimmed makes only about 20 ounces cooked.
The rice and potasto salad are covered in the plan for 100 pages. Pasta salad is a lot easier to prepare for this many people.

If it is the only main course, this is usually about 40 cups. At a cup and a half per person (large bowl), it serves about 30+ people.

Probably been mentioned, but... 3 oz. of red meat, 4 oz. of seafood, poultry, etc. per person as a healthy rule. That would be at the most 5 lbs. of meat for chili for 20, and it would be a very rich dish. Should be heavier on the tomatoes and veggies and the varieties of beans, and lighter on the meat, especially if served with cheese and/or sour cream.

Diane, there are two difficulties here; the 3 ounce portion is cooked, and that is 4 ounces raw. Also, party portions, which is what people are usually inquiring about, are about twice as large (7-8 ounces cooked), particularly if it is buffet/ self service.

Caterers would allow 5 ounces cooked ready to eat beef PLUS 3 ounces cooked ready to eat ham for each person. That is at least 2 pounds raw lean boneless beef for each 5 people (more if you are doing tenderloin, prime rib, etc) PLUS 1 pound boneless ready to heat ham for each 4 people.

Potatoes, I allow 35-40 pounds for 100 people. You would want about 3/4 that.

Ruth you can figure the amounts yourself. Count the 45 as 1/2 of 100. Use the plan for 100 page, the sandwich event page and the breakfast planning page. Then if you want to pot your results, I will be glad to check them for you. You can then figure your costs using local prices. Prices vary widely across the country and I don't know if you are going to choose peanut butter or sliced ham or egg salad or heroes for your sandwiches.

I'm having a party this weekend and estimate about 60 people. I plan on having 20 pounds of bone-in chicken wings, 20 pounds of meatballs, then 10-20 pounds of salads like potato salad or pasta salad (such as 10 pounds of potato salad and 10 pounds of pasta salad or maybe 5 pounds of each). Chad the meat is OK, but you need at least 6 gallons of side dishes for 60 people. 20 pounds is about 2 1/2 gallons.

Anita, about 18 pounds boneless fillet should be enough with this menu. I would probably serve a non-pasta salad if I were serving spaghetti.

Nicci, the basic idea for USA portions is that each adult need 5 ounces total cooked ready to eat meat for an ordinary meal and 7-8 ounces for a party meal or for more than one meat at the same time. Most boneless raw meats shrink about 1/3; most ground meats shrink about the same, so a pound of boneless raw makes 10-11 ounces cooked. Liver, 1 pound serves 4, it has virtually no fat and doesn't shrink much.

If this is a pasta side dish (non-meat, basically), 8-10 pounds dry depending on other starchy foods.
For the sandwiches, I would do 38 pounds boneless raw meat. Can't tell you exactly how to divide it for your particular crowd, but usually it is about 5/8 beef and 3/8 turkey.

Fried fish for this many people is tough.

I would start with 1/2 pound raw ribs plus 2 pieces of fish per person (3 if nuggets and not fillets). 3 hush puppies per person. The rest is covered in the lists and recipes on site; use 2/3 of the amounts per 100. The recipe for cheesy hash browns is at the bottom of the family brunch page.

Sorry, about the numbers of people that I did not say. well since we will have ASL films which deaf actors and actress will play the movie and we want to cook for other people who coming to watch the movie "Gerald". At dining room can serve over 50 people but I think less that 50 people.Maybe around 30 to serve.Will have shagetti dinner salad,homemade cakes garlic bread with drinks. Thank U Ellen

I have cooked for a large summer camp for deaf kids, and for their family nights- learned the finger alphabet and a few signs- I suggest you use 2/3 the amounts on the dinner for 50-60, thius will serve up to 40 people easily.

Every item except the sandwiches is covered in the plan for 100 list and the beverage planning list. The cheesy potatoes, you need to start with 20+ pounds of frozen hash browns per 100, using your planned recipe. The mac and cheese, 8 pounds dry pasta per 100.

On the tea, make 1/2 and half; it is always easier to add sweetener than remove it. At weddings I usually also suggest adding dinner service coffee; people like coffee with cake.

On the sandwiches, you need 4 ounces of cooked ready to eat meat per person, that is 1 pound raw boneless shoulder for each 3 people. Freeze/ store in the sauce and it bulks up the meat some. 120 rolls per 100. Sandwich condiments per 100 are on the sandwich event page, you would use BBQ sauce instead of ketchup, otherwise the same. I would provide a big bowl of egg salad or swirled peanut butter and jam for the non-pork eaters; in this size crowd there will be some.
