Reheating fried rice

Hi Ellen,
Any tips for reheating fried rice for 50?
The plan is to cook the rice on Thursday and put in the fridge overnight then fry it with onion, celery, and carrots on friday.
It will be reheated in the oven at the venue on Saturday with frozen peas tossed in and precooked salad shrimp, topped with chopped green onions just befor serving.
I am afraid of it either drying out too much or worse turning to mush.

OK to cook rice ahead, good in fact, but there is no good way to reheat already fried rice that I know of- any way you can fry the veggies ahead, but not assemble until day of? Read the recipe for practically perfect fried rice recipe on this site for a full discussion.

If I fry it in batches a the hall and then toss it all together with the veggies, how long can I keep it warm in the oven before serving. Dinner is at six. It one part of a larger dinner menu that will be served buffet style.
