i can't get hold of nigari( for making tofu) in Australia Can i use epson salts or what do yousussest as the best substitute???

Yes you can use Epsom, salts (magnesium). But I bet you CAN get food grade gypsum, which is even better- see the discussion on the making tofu and soymilk page in the clear light section.
