I am planning a wedding and want to know if it's unreasonable to want turkey served. There will be about 250-300 people

As long as the turkey is Not carved at the site, but cooked ahead, sliced, and served in chafing dishes or by the plate for a seated non-buffet dinner, it is a great choice. But if you are self-catering or having someone in the family do this for you, PLEASE read my article on self catering your wedding before you decide on a dinner for this many people.
