Im doing my daughters wedding for 300 people and we are having only appetizers, veggie, fruit, meatballs, weiners and ham/turkey sandwiches with cheese balls and cubes, Im not sure how much to get or plan for.

Kim, do please read my article about self-catering a wedding. Then, amounts depend on time of day, if it is tidbits after a 1 PM wedding, you are in a whole different ball park from an 11 AM wedding, when the folks will basically be devouring your offerings as lunch, and will eat twice as much.
