Donna, selecting a complex wedding menu for a large crowd like this one as your first time out is a way to blow your reputation at the very beginning.

Do you have at least 4 kitchen people, 10-12 servers, and a commercial kitchen with walk-in cooler and commercial ovens? That's what you need to do this job. This menu is a $40-60 per person menu outside any major metropolitan area.

You also MUST have liability insurance. If someone got sick or injured, you could be sued- lose your house, etc.

Do post this to the pro boards, cheftalk.com, chef2chef.com. If you want my help on a pro basis, contact me at the update email address at the bottom of the page.
