Ellen,
I have been put in charge of bringing chips & salsa to a reception for 250 people. Can you please give me an idea of what kind of quantities of corn chips and salsa I am going to need?

Yep. You want 8 pounds of tortilla chips per 100 people, and 3 quarts to 1 gallon of salsa per 100- less if thin, more if chunky. Viva fiesta.
