Catering for 300 people

I am catering a fundraiser for 300 guests buffet style. The menu will consist of Pork Alentejana, Chicken Mozambique, Bacalhau, Rice, and Vegetables. I am using boneless chicken thigh for the Mozambique. How many pounds of each item should I have??

You want about 5/8 pork and 3/8 chicken, so about 100 people's worth of chicken. Are you also asking about the rest?

I was planning on 70lbs of boneless/skinless chicken thigh, 30lbs of pork loin (cut in 1/4 inch cubes), 30lbs of little necks (roughly 240 clams), and 60lbs of salted codfish. Will have abundance of rice and veggies as well as providing rolls. There will also be desserts donated for the event. It is buffet style but my staff will be serving each item from chaffing dishes. Do you think I have enough or should I increase the amounts I ordered??
