I read your advice on skimming soymilk to make a low fat version after boiling. Is there any way to make a lowfat or nonfat version when using a soy milk maker? Thanks.

This question comes up occasionally. Basically, the machines work really hard to blend it all together, just the opposite of what you are looking for. Some people think that letting it stand in the refrigerator overnight and skimming the top 1/2 to 1 inch works, but I am afraid that may be wishful thinking. No good answer except that it is a very healthy fat and you might try cutting down somewhere else in your menu. Kids, especially toddlers, can really use the full fat style to promote growth and neural development.
