When making soy nuts, do you roast green soybeans (edamame) or mature dry beans?

I roast cooked (soaked and boiled) dried soybeans. I would boil the edamame before roasting, also, interesting idea, because of the substances in raw or undercooked soybeans that interfere with absorption of many nutrients.
