new at catering-need advice on how to figure quant

Have just been asked to cater for 2 different get togethers.. Feeling uneasy about the amounts needed

first party asked for 100 people asked for
2 four foot subs
tray of 10 wraps cut in 4's
pasta salad
potato salad
garden salad
and she is adding veggie and fruit trays herself

2nd party is 40 people
they asked for all these items
apparently this is a throughout the day get together.
Baked Ziti
Chicken Dish?
Sausage and Peppers
Meatballs
macaroni Salad
Potato Salad
Coleslaw
Rolls

Adri, the first is not nearly enough food for 100 and it is ALWAYS the caterers fault if the food runs out. A 6 foot sub only serves 30.

Either get the clients to specify what they want and drop it off, or don't take the jobs. Go to the pro boards catering section for more help:

You also need written contracts, paid half in advance and half on delivery, and you need liability insurance.
