quantities for 100 buffet

Hi there
I'm organising a buffet for an Art Gallery for approx. 100 guests. Time is between 11am -2pm, probably 60% of the guests over 60years old (if that makes a difference??).
I'll be serving cheeses, patés, bread, olives, cheery tomatoes, cold meats, i.e salami. I'm just not sure what quantities I should order from the suppliers - and any suggestions for further ideas to go with this simple buffet. Thank you very much for any help.

Yes, ages do affect amounts and foods. For example, I would do ham, rather than salami.
Nice menu, and you need fruits and sweets. Are you planning any desserts yet?
