shrimp jambalaya for 25 people

I know how to make good shrimp jambalaya, but
am confused as how to make it for 25-30 people.
There will be bread and a salad, but I want
to make sure there is plenty.

You need about 5 pounds rice- a bit less if they are not heavy eaters- and the necessary fixings for that weight. Allow the extra time for the water to boil (20 minutes per gallon); once it is boiling, it just takes a little longer than a smaller amount. Cut the salt in half when you multiply the recipe.
