I'm preparing mini crab cakes for a catered function for 300 guests. Approx how many pounds of crab meat per 100 guests. (I want to serve at least 2 mini cakes per person

Brenda, these vary hugely in both size and amount of crab versus crumbs. Can't help specifically without your recipe. However, I generally allow 3 ounces per person for shrimp, crab, slamon, etc for appetizer tables.
