Ellen,
I would like to make Orange Dijon Wedding chicken for my nieces wedding. You say I can make it in advance. Once I brown and freeze the chicken. Can I finish cooking it in the roasters the day of the wedding. Please emailme if possible.

When you refer to reheat covered at 325 for about 1 to 1 1/2 hours. Do you mean cook.
no additional cooking time is needed? I can carry it cold, and then cook in roasters at the hall.

This is pre-cooked and frozen, then thawed in the refrigerator overnight and reheated, it takes about 1 1/2 hours.

If I am missunderstanding Please correct.
I will Brown well in oil. Cool as fast as possible. and Freeze. Remove from freezer thaw overnight in refrigerator. Cook or reheat in roaster for 1or 1 1/2 hours.

Yes, it cooks at 325 for 1 1/2 hours in a preheated roaster. Then it is ready to eat.
