Hi Ellen,

I am having an outdoor party with about 80 guests. We are trying to figure out how much fruit (in pounds) we will need for a fruit salad, and what fruit we should use to make it so that it stays fresh the longest? Thanks for your help!

Check the fruit tray page in Big Pots for help. You want about 6 ounces peeled cutup ready to eat fruit per person. Citrus and pineapple stays fresh. Use a raspgerry vinegrette or use a dressing of vanilla yogurt with honey and mace if you want to use fruits that might brown. For summer outside, using partially thawed frozen peach slices keeps the salad cold and tastes great.
