HI! I am having a italian buffet party for 75 people. How many entrees selections do I need to provide? I am also doing one for 125 in the summer. Thanks

3 entrees plus a vegetable that can serve as an entree for non meat eaters , such as eggplant Parmesan, would be an excellent selection.
