Baking Swiss Steak in 18 qt Roaster
How many 18 qt roasters would be needed to bake 50 pieces of swiss steak, and then how long will it take to bake them in a soup mixture for gravy?
You can do about 15 pounds in 1 roaster, so two should be fine. Preheat the roasters to 350 for at least 20 minutes. Bake for about 2 hours, until tender; will hold at 18-0 for up to two hours more.
Would you suggest browning the swiss steak before baking it in the roaster, or is it okay to the juice from the raw steak blend in with the soup mixture? Did not understand hold at 18-0...sorry!
Sorry, that was 180 degrees. Yes, good to brown before adding the sauce.
