chicken enchilada's

I am making chicken and vegie enchiladas, refried beans and rice for about 75 people. I am assuming there will be about 2 enchilada's per person.

I am not sure how much rice I need to make. Would 5 lbs of dry be enough. Beans, I was thinking 3 gallons. Is that about right. Now much chicken should I could up for this? HELP!

I would do 6 pounds of rice.

3 gallons is plenty- probably some left.

You want about 12 pounds boneless chicken or twice that whole chicken.
