I need to know how long to cook a 12 lb. turkey in a 18 quart roaster oven and at what temp. Also do I need to use the rack and add water?

Marsha these details are covered over and over on the roaster threads and the turkey thread, with more details in the turkey roasting article.. No water, use rack, same time and temp as the oven, using the shortest estimated time and a thermometer to check. See also:
