My oven is broken. Can I cook my Brisket in the Nesco Roaster and will it turn out tender like cooking in the slow oven? What temp and how long?

Yes, use he same temp and time as the regular oven, you will be pleased at how moist and tender it comes out.

Should I wrap it in foil like I do in my oven? Do I put it on a rack or in a glass baking dish?

Yes wrap. Either rack or dish is fine.
