7 layer salad

Hi, we are trying to do 7 layer salad for 150 people. Planning on using 2lb bags of romaine salad lettuce. Other ingredianrs will be:
peas
eggs
bacon
cheddar cheese
red onion
would like to do a mayo/sour cream dressing and make this salad day before. could you please suggest quanities and any prep tips. Thank you.
