Family Style dinner
I'm catering a family style wedding for 120. Menu: beef dip, pulled bbq chix sliders, wild rice, mash pots, roasted bn squash, mixed greens salad. Can I serve the au jus for the beef dip in 4 oz plastic souffle cups w/ a lid? I was thinking of having a little tray/plate w/ the pre-portioned au jus and a bowl/spoon of horseradish. And then for the salad, about how much greens do you allow for 100-120 people?
Yes, you can do the au jus that way. For salad, see the salads on the plan for 100 page and do 1 1/4 the amount for 100.
