Caprese Salad
I'm planning for an informal party with approximately 30 folks and will be serving baked ziti in a chafing dish.

I think i've figured out the correct amount of baked ziti to prepare ( 3 half-pans )but have no idea how to estimate the amount for caprese salad. Do you have an economical recipe for this? I was thinking of adding cukes to the basic recipe of tomatos and mozzerrella to add more bulk.

Instead of thinking caprese, how about using a Greek salad recipe? Already has the cukes, cheese and tomatoes-
