We are making 100# of little red potatoes for a wedding reception. We plan on using 3 roasters. How long will it take for them to cook? Is there a danger of them being too mushy if they cook overnight on low temp setting to ensure they will be done? Serve time will be 5:30

3 roasters is not enough to cook them, although OK to serve. Each will only cook about 20 pounds per batch successfully. And no you can't cook all night and serve the following evening. You might consider a roasted potato salad if cooking ahead is critical.
