Wondering about baking a crustedquiche in a 4 qt chafing dish for a business breakfast.....will that work? should I triple my recipe that usually does a pie tin for 6-8
I wouldn't. The issue is, the thickness of the filling and getting the middle done without overcooking the edges. I would do individual 9-10" quiches, some meatless, for this event.
