I am hosting a wedding reception for 225 people. They want appetizers; fruit skewers, chinese chicken salad, shrimp shooters, wings both buffalo and teriyaki and a kids section which consist of chicken nuggets and fries. I am also providing a taco bar which I will be serving rico tacos carne asada and grilled chicken. This is an evening event starting at 6pm - 10pm food is to be provided for 2 hours between 6pm- 8pm can you help me with amounts of food needed and approximate amount of people I will need to help serve. Joe, this is a multi-station, actually rather high end catering job, requiring a lot of help. See this discussion:

Hi Ellen, This is not a catering job this is helping out friends of my wife who are limited on funds,but still want to do something nice. We are providing all the labor for them free of charge and they are buying all the food. we just have to figure out what amounts of food we need to purchase. Everything else I think we have a hold of.

Hi Ellen, I'm sorry I have food under control for Taco Bar. Its the appetizers that I need your help with. I am not sure how much to make for each item for a 2 hour span. Please Please help me.. Thank you mucho :)Joe

OK. First advice- do tater tots or oven fries, you definitely do not want to be deep frying in this situation. Adults will eat chicken nuggets, also, so allow 2 ounces each for potatoes and nuggets for everyone.

Second, may I suggest fruit trays, rather than fruit skewers? Maybe just a few skewers for deco. Hold better, MUCH less work, leftovers are more usable. Use the fruit tray page, plan for 200.

chinese chicken salad, as an appetizer, a little difficult, allow 1/3 cup per person
shrimp shooters, frighteningly popular. Allow 1 pound shelled shrimp per 5, 1/4 cup cocktail sauce. If budget is a concern, you might do a mixed shrimp and Krab surimi salad instead
wings both buffalo and teriyaki - 3 pieces of each per person, 2 tablespoons blue cheese dressing per person
