What is the best way to steam 500 clams so the do not get tough before the dinner time.
Also, can we cook 20 lobsters and put them in a steam table at least 20 mins. before dinner or will these get tough?
Our Auxiliary holds a dinner the second Sat of every month. We cook at the AMVETS Post 312 in North Port Florida.

Margaret, can you tell me more about the event, for example, why 20 lobsters? To serve 20, or will they be split? How many will be served and what is the kitchen set up?
Do you know to purge the live clams by putting them in water with cornmeal stirred in?
