We are making Beef on a Bun for about 350 quests. How many pound of beef will I need and what type of roast, I'm going to cook it a long time on low heat

I prefer chuck roast (shoulder) for this- juicy and flavorful. It depends somewhat on the side dishes (for example, self-serve with baked beans and potato salad you use less meat than with salad and chips), but for shredded, about 30 pounds raw boneless per 100 will be adequate in most cases. 35 for sliced.
