What to buy and how much food to buy to feed 40 people a continental breakfast?

If this is really their breakfast and you are going to do business that morning, you want to add some protein to the usual "bread and coffee" outline of the original continental breakfast. A healthy breakfast includes some protein and some fiber. Protein can come from low fat meats, eggs, beans or dairy. Fiber can be found in whole grains, vegetables and fruits. What you select also depends on who you are serving.
When I provide a pickup breakfast for 40 people, I include:
1 dozen hard boiled eggs
1-2 pounds string cheese or cheese or sliced dry sausage (summer sausage or salami, for example)
juice, 6 ounce per person or 1 juice pack per person
coffee/tea, 1/2 the amount for breakfast coffee on the beverage planning page
sweet bread- 1 large or 3 mini muffins per person, or 2 small Danish, plus 10%; or 1 loaf quick bread per 4 people; or 1 whole bagel plus 2 ounces cream cheese and 2 tablespoons jam or jelly
1 jar smooth nut butter
24 small cups of low fat yogurt
