I suggest you purchase frozen concentrate. Amounts are listed on the beverages page of the big pots planning section. The maximum is 6 ga;llons per hundred plus ice for a meal, but you may need as little as half as much.

How much pasta salad for graduation reception
Ellen:
We are having a graduation reception for appx 800 people. The menu- hot turkey sandwiches, potatoe salad, pasta salad, carrots and dip, pickles, potatoe chips, watermelon, canteloupe and grapes.Cake and ice cream for dessert.
Can you tell me how much pasta I would need to serve this many people and how many watermelons, cantaloupes and grapes to purchase.

See the serves 100 page and the salad page in big pots for pasta salad amounts, and there are some recipes for 100 person salads, too. You want a TOTAL of 1 gallon side dishes for each 10 persons.

Fruit- You want about 5-6 ounces of ready to eat for each person for your fruit total, so you might start with the idea of 350-400 pounds whole fruits, or 260 pounds ready to eat. Remember that unlike grapes and canteloupes, UNCUT watermelons with unpunctured skins will keep many weeks in a cool place, so cut only about half to start and sell off what is left over.

Is this a Mexican style fruit cup, or are the cukes a standalone salad? Check the quantities to serve 100 page and the fruit trays page in Big Pots. For a stand alone informal/bbq dessert, most caterers allow 1 pound of whole watermelon per person.

How much food to serve 40?
This is for a garden wedding.

I was thinking of ordering full pans of the following. (each full pan is for 30 people)
chicken marsala
sausage/peppers and onions
bake ziti
meatballs

then a half pan (15 people)
stuffed cabbage
eggplant parm

If it is 40 people, this is way too much food. I would skip the meatballs entirely and get half pans of everything else. You will still have too much, but not extremely so.

How much food to buy is almost the least of your worries. I nee more info.

Is this teens, families, men, adults? Is this for one meal, a weekend, a party, what? What are your cooking and refrigeration facilities? How many people will be helping with the cooking and serving? You need about 70 people to serve this many, and finding the volunteers or staff and supervising them is a job all by itself.

This meal is for a Christian Nightclub. I will be serving from 8pm to 1am. It is for 9/2/05, one night.I have a extremely large grill and a two basket deep fryer. I will be in an outside tent. my refrigeration will be inside and outside. I will be serving, hamburgers, hotdogs, frenchfries, whole chicken wings, assorted bagged chips, canned soda, Ice, bottled water, cut up pieces of cake, cookies, ketchup, mustard, relish, cheese for fries and hotdogs, hotsauce, napkins, plates, cups, and french fry papers. I will have four counter persons, one grill and one deep fry person.

Sharon, please go to the new pages page and click on the link to feeding 500 to read that article. Also the one on big pots about self catering, if you haven't read it already.

Is the food included in the event price, or are the items bought separately by the diners? This strongly effects how much and what is ordered!

If it is included in the event price, I suggest you add baked beans or cowboy beans of some kind to help fill plates at a lower cost.

Here is a start on your shopping list, assuming price included in the event:
200 pounds sausages (1 sausage or large hotdog per person)
1 4 ounce frozen hamburger patty per person
6 pieces chicken wings per person (1 wing makes 2 pieces)
6 pounds chips per 100 people
3-4 ounces fries per person, depends on portion size
Condiments and beverages covered under the quantites for 100 section. You will need coffee setup too.

This is a 5 hour event. To serve 500 to 600 people cafeteria line style (which is faster than per order)during a three-hour event requires 40 to 60 on-site volunteer servers. This does not count the cooks or kitchen crew, or the clean up after. If you try to serve 125 people per hour, quite difficult with the size staff you are considering, no one will get seconds and the last people will get nothing for the first 3-4 hours. Not the best plan. Think about the amount of food serving booths you see at a county fair- way more than one!
So first things first, the staff will become frustrated and exhausted, increase the size of the staff. For example, the fryer needs a bagger and possibly also a server for the fries. Also, all staff including the cooks needs to be switched out at least every hour for a 15-20 minute break!
If the booth is too small for more staff, set up auxiliary serving stations for the items suggested below.
You need 1-2 people who are just runners going back and forth to the kitchen and supplies and keeping the condiment tables filled.
Here are the changes I would make:
1) Change hot wings to several flavors of sticky wings, prepare in several Nesco roasters and hold hot from the start, so they are ready to serve at the beginning of the event and can be served quickly without tying up the fryer. Add a staffer for these.
2) Make steamed hotdogs or even better Polish sausage or kielbasa by layering sauages in two other Nesco roasters with a good quality sauerkraut. Have a third roaster for warming the buns. Put the relish table near but away from the booth so they pick up their buns and fries and move away from the serving line. Add another staffer just for these. If someone doesn't want steamed they can ask for grilled.
3) Use the grill for hamburgers and grilled onions only. People love grilled onions, they make the place smell great and you can use a 4 ounce patty instead of a 5 ounce patty without it looking skimpy.

PS if you don't wanty to use saurkraut, layer with frozen bell pepper strips and chopped onion that have been thawed overnight in the refrigerator. Voila! Sausage and peppers!

Sharon, I just posted a bunch of info about cakes. Start on the quantities for 100 page or desserts and teas page and go to the new pages page to find simple yellow cake for 100 from scratch. Any recipe with that amount of flour will be about right for your amount.

Invest in scoops that make 1/3 cup scoops.

3n 1/2 gallons for 2 scoop sundaes if you scoop the ice cream. Double that if teenagers scoop their own. Add about 20% extra if grownups scoop, 10% each for more than one flavor.

Mia, it depends on whether this is a meal replacement. Assuming it is NOT, for example 1 PM wedding with a 2 hour reception to follow, you want to allow about 12 pieces per person, with 1-2 ounces of cheese counting as 1 piece.

If it is am 11:AM wedding, you basically have to double everything, as people will be eating lunch.

All the items including beverages you mention are discussed on the planning for 100 pages in the big pots section. If you prepare an estimate and email it to me, I will go over it for you. Are you bride ofr family, or is this a job?

Allow 1 tablespoon of butter and 2 tablespoons of sour cream per person, 10 pounds of butter and 20 pints of sour cream. If it is buffet service, you can provide part of the butter as a soft tup margarine such as Smart Beat, and part nonfat sour cream, but they need to be labelled.

1 gallon of coffee is 128 ounces. If you are counting in puny cups, it is 20, but if you are serving 12 ounce cups as most people do these days, it is just 11 servings. At breakfast this is good for about 8 peuple and about 1 in 6 will look for decaf, at dinnertime it is fine for 12 to 15 and most will be decaf.

Fresh fruit, you want 6 ounces ready to eat. Frozen peach slices, partially defrosted, are very tasty and will keep the whole salad cold.

If you are using all canned fruit, 1 #10 can is 24 1/2 cup servings. This is the usual size for a dished up little dish of fruit, such a s a hot spiced fruit dish.

The fruit tray page in the Big Pots Planning section has the cup and pound measurements for lots of different fruits. If it is a cold fruit compote and you are using some fresh fruits, melons, especially large watermelons, are a good economy. Just get rid of the seeds as you slice and dice.

We are having a symposium with workshops, posters and speakers. We want to provide coffee/tea with creamer and sugar, juice/soda, bagels, creamcheese, muffins, cookies, and cheese and crackers. The event will last for one day and people will be in and out of the building.

This depends somewhat on whether you serve in two meals, a morning break and an afternoon break, OR whether you serve all day. See the beverages list and do breakfast coffe for 100, plus soda for 50. Then in the afternoon do coffee for 50, iced tea and soda for 100.

I would split the snacks into two parts so they were not the same selection with cookies in the afternoon and muffins in the morning. Cheese both times- your audience will do better with the proteins- and a big basket of hardboiled eggs is cheap and popular. General idea of amounts on the breakfast and dessert planning pages. Total side dishes usually allowed is 1 gallon for each 10 people. I allow about 4 1/2 gallons potato salad and 3-4 gallons baked beans per 100 people, because I am also adding slaw or salad. If you do not have slad/slaw or any other side dishes split about 6/4.

Karen, the mass (kitchen) at the military base can tell you EXACTLY how much they would use for this number of soldiers.

For 300 people, you need at LEAST three cooks and 16 servers.

15-16 #10 cans will provide 1/2 cup servings for each of your 300 people. Mashed potatoes, start with 115 pounds potatoes. Pies, 1 pie for each 4 people for these big eaters. I would make some sheet cakes insread of all pies.

You need 7 gallons of gravy...

Turkey, whole, I allow 1 pound raw per person. Boneless ham as a second choice, 4 people per pound.

Hi, I NEVER use red potatoes for mashed, only baking potatoes. That said, at least 35 pounds fresh potatoes per 100 people. Broccoli, depends on whole or cut up, about 3 people per pound.

Eleanor, I would allow about 4-5 servings to the pound, unless this is a turnip-eating crowd you won't get a lot of requests for seconds. 1/2 cup is a standard serving size for cooked vegetables.

Linda, 4 people per chicken, 2 pieces each, is enough, but I usually add 10% more. A #10 can of green beans makes 20 people's-worth of servings, 12 cups cooked. If you offer broiled chicken as well, some folks will prefer that...

Turkeys for the Army

Hi, Sargeant,

There is a LOT of good serving info on the military cooking manuals, I use them myself for basic amounts.

Anyway, you want to allow 6 oz cooked turkey and 3 oz cooked ham for everyone except little kids. You will have some control since you are carving and I presume serving. 1 pound whole raw turkey makes 2 people's worth at this rate. You do know that turkeys 16 piunds and over have more meat in a pound of raw than the samller turkeys?

So 2oo pounds raw whole large turkeys and 50 pounds boneless ham, more or less...

My favorite memory of an overseas military thanksgiving as a kid, they gave every kid a whole box of Whitman's chocolates to take home. How thrilling!!!

By the way, about the turkeys; quartered turkeys roast easier and faster and you can get more in t he same amount of oven space at one time. Also, if you have a lot of kids, you can get turkey legs only, they weigh about 1 pound each and come in cases of 40 pounds. Always a good backup if you are worried about quantity.

Sargeant, Re: the turkeys: my friends at butterball.com suggest you allow 1 full pound of turkey per adult person unless you are preparing a LOT of side dishes. I have found that when I am using very large turkeys the lower amount is fine, but just want you to have a heads up on this.

Hi, if this is a menu where a stew type entree is acceptable, this is by far the simplest for a single person to handle unless you want to go with either a meatloaf/ground beef dish or an entree casserole or baked pasta dish. It can be fancy, such as a cassoulet or stroganoff, pork chops or cutlets in gravy, etc.

I have quite a lot of entree recipes for 100 in the big pots section, you need to double the recipe for 200 and add 10% if it will be 220 or if it is 200 people serving themselves buffet style.

We are having a Christmas dinner for 100 people (about 50 adults and 50 children). The catering company offers the menu items by the pound. How much turkey would you suggest per person, and how much of the sides would you suggest per person. For the slaw, check the slaw page in big pots.

For the stew, allow 4 ounces raw boneless meat, 6-7 ounces potato and about 8-10 ounces other veggies (onions, carrots, celery, etc) to start. Invest in a GOOD beef bouillon /gravy base to enrich the gravy )I like "Better then Bouillon" brand), and consider using some canned or pureed tomatoes as part of the gravy, you will want about 3-4 gallons of gravy for each 100 people.

Lori, Since April 2004, I no longer do whole plans for people; too many requests. So I posted a bunch of planning pages in the bi pots section for BBQ, beverages, salads etc. What I WILL do is check your estimates if you email them to me at the link at the bottom of the page.
The usual estimate is 1 1/4 to 1 1/2 pounds whole raw hog per person, (yes, 30+ pounds) which is 4 pigs or more or 10 suckling pigs or more and I have to warn you, this is an expensive and VERY difficult roast; you need expereienced pit crews, and at least 20 additional servers/cooks to pull it off. You would be well-advised to coonsider hiring grillmasters/ smoker masters for a pork loin and brisket roast instead, or do one pig and the rest pork and brisket.

Even how much salad and salad dressing is covered, including thick versus thin. Please write back about any individual items you have a hard time figuring, and CONGRATULATIONS!

Dwight, the sausage gravy recipe was one of the over 200 ready to post recipes that disappeared forever when my old computer died over Christmas.

You MUST use the black pepper. You MUST use whole milk. And yes, you actually add the bacon grease to the sausage grease. It's just a heart attack waiting to happen...

This is for 200 people:
* 25 pounds ground pork sausage
* 4 cups bacon grease
* 6-3/4 cups all-purpose flour
* 5 gallons whole milk
* 1/4 cup salt OR to taste- do taste while adding
* 2 tablespoons and 1/4 teaspoon ground black pepper

DIRECTIONS:

1. Brown sausage in a roasting pan over medium-high heat. Set aside, leaving the drippings in the skillet.
2. Mix bacon grease into the sausage drippings. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown. This take at least a half hour. If you burn it you have to throw it away and start over, so do not turn your back.
3. Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for at least 25 minutes, stirring, covering.

The sausage gravy recipe has a LOT of sausage. You can decrease the sausage by 1/3 or increase the gravy by 1/3 to 1/2 and still have plenty of chunks.

Use good sausage, of course; sage or hot is nice. If you have no bacon grease, butter is a possibility, but for heavens sake, if it is a feast, get the bacon grease. Some people add a little garlic or sage, or Tabasco, but die-hard sausage gravy fans will notice.

Also, it tends to separate if served standing on a buffet line-

Bea, the best green beans like this I had lately, were steamed, fresh, a mix of yellow, light green and the very deep French, served whole with just the stem end clipped. They had julienned carrots almost the length and about half the diameter of the green beans steamed and tossed in. The sauce was a browned real butter sauce with the blanched slivered almonds toasted in. It did not need venegar for flavoe and it was beautiful.

A sauce of fresh dill and olive oil is another option. Greek style cooked in a freshly simmered sauce of cherry tomatoes and slivered celery is also great.

Annette, ice cream is actually included in the quantities for 100 pages, even with some sauce discussion. For 60 people, one single flavor (vanilla), use 2/3 of the 100 amount. If it is teens or self service, you will use more- about 1 1/4 cups per person. If you have the time and the freezer space, premaking and freezing ice cream balls/ scoops will limit the amount used. ir have someone scoop the ice cream- two 1/2 cup scoops is usual, making 1 cup per person=60 cups=15 quarts=3 3/4 gallons. If you have two flavors, you need to allow more, at least 4 1/2, as it is very hard to guess how much of each flavor. This varies hugely by age, region of the country and local preference.

This is a very delicious meat and people tend to eat plenty. I would buy 3 pounds raw trimmed for each 4 people to allow for generous portions and cooking shrinkage. Potaoes, start with 1 to 1 1/4 pound raw for each 3 people. Green beans 4-5 ounces fresh for each person (1 pound for 3 to 4 people).

I allow 120 slices/ rolls or bread servings per 100 people. There is specific info for quantities on the planning pages for desserts, appetizers and beverages.With the wedding cake you will want 1 dessert serving per person, but cut or portioned into smaller portions so people can try several different ones.

Lots of children at 8PM? Sounds like a plan for trouble. Consider setting up a rocking room or quiet room for the tired out.

For 300 people, I might make 3 different bean and ham dishes- there are lots of good ones. Like ham, lima and brown sugar, navy and onion, blackeyed peas and snaps.

I like to use picnic hams, simmered to shredds, for the meat. I would use white beans (navy, pea) if I did only one.

One secret to really good bean dishes is to use half a head of celery and an onion to each pound of dry beans.

Side Dish Beans for 100 People

3 gallons (4 #10 cans)ready to eat Beans
2 heads celery, slices and browned
1-2 pounds onions, diced and sauteed golden
1 gallon crushed tomatoes
3 pounds brown sugar
6 pounds shredded ham or smoked brisket, chopped
OR diced, thick bacon cooked crisp

Drain the juice from half the beans, save in case you need it to moisten as it heats. Spray the roasting pan with non-stick spray, then mix the drained beans in an 18 quart large roaster oven with the onions and celery, rest of the beans, the tomatoes, sugar and meat/brisket. Heat covered on low until heated through, preferably at least 2 hours; keep warm to serve.

You can also add:
1-2 pounds diced bell pepper
8 ounces prepared mustard

Yvonne, this is quite a light meal for 20. It will cook out to 1 plate each with about 3 ounces of cooked chicken, 1/4 to 1/3 cup of green beans, and two modest slices of bread. Even if I did not add more meat, I would double the amount of green beans and add 6 quarts or 2 9x13 dishes of of heavy side veg or starch dish- rice, potatoes or potato/pasta salad, baked potatoes, etc. And probably a good dessert. But if my budget allowed, I would start by adding 1 more bag of chicken.

If you take a deep breath and think about the plates, you can figure this out easily. You want a piece of fish, small fries=4 ounces and 2 hushpuppies for a kid. You want 2 goodsize or three smaller fish (about 9 ounces) large fries=7 ounces and 3 hushpuppies for each adult and teen, and you want to add 20% or 1/5 to this total for seconds. You may add 1 1/2 gallons of slaw or salad.

Tea, you have plenty. Ice, you want 1 pound per person for drinks and chilling .

Becky, the basic rule of thumb is 1 gallon total of sides for each 10 people, so if you have 80 people, you want about 8 gallons. I would add some cole slaw or green salad and have about 3 1/2 gallons of potato, 2 1/2 of mac/pasta and 2 of slaw. You canalso just use my recipes and make 50 persons-worth (1/2 recipe) of mac and of potato and about 2-3 ounces per person of slaw or salad- either will work.

Meat and cheese trays, you want 4-5 ounces meat and 2-3 ounces sliced cheese per person. See the sandwich event page for more info, condiments and pickles, etc.

I am serving around 200 people for graduation, mostly adults. I am having meatballs, cooked chicken sandwiches and barbeque beef sandwiches. How many lbs of each would you recommend? Also, how many lbs of potato salad would I need for that number of people? Thanks.

Your potato salad recipe should start with 70 pounds of raw potatoes. If you have no other side dishes (slaw, beans, etc) you will use up to 20 gallons of potato salad. If you have other similar dishes, you want 20 gallons TOTAL of side salads, of which at least 1/2 should be potato salad.

The meats are harder. 5 sandwiches per cooked ready to eat pound of meat/meat balls, probably 1 and 1/2 sandwiches per person- depends on time of day, side dishes, dessert, alcohol- so say 3 people per pound of ready to eat meats. Chickens dress to 1/2 of their starting weight when skinned and boned, beef to 60% of raw weight after cooking. You have to decide how to split it up- I don't know what is more popular in your area- but if you stick to this total you will have plenty. Get really good buns (bakery fresh,maybe) and look on the sandwich events page for amounts of condiments.

They will be pretty tired of watermelon by the end of the week, consider adding other melons, grapes, bananas, apples and tangerines. Get small apples and bananas. Oranges only if you cut and/or peel them.

I would buy 1/2 pound of fruit per kid per day counting all fruits on the menu.

I am having a Memorial day cookout graduation party for 125 people. We will be cooking hamburgers, hotdogs, marinated chicken breasts and chicken feta spinach knockwurst. Half of the people coming are children ranging from elementary school age to high schoolers. I plan on having several salad selections, fruit, baked beans, two pasta selections,roasted vegetables, and desserts including a cake. How much of each meat should I get? Karen, nice menu. You want 8-9 ounces total cooked meats for each adult or teen, 5-6 per younger. I would get 1 sausage per adult, 1 hot dog per kid, 1 patty per person and 1 3 ounce piece of per person (that's a half breast). You will have plenty.

First of all, use the plan for 100 tables for quantities, that will help.

If you are having to actually barbecue, consider serving grilled chicken breasts and real kiolbasa (Sam's carries a good one called "Kiolbasa brand"} instead of burgers and dogs. Actually easier to cook, nuch nicer and not much more expensive if bought in bulk. You don't mention the kitchen arrangements or whether you are cooking or assembling from deli.

If assembling, I would get two cakes a white and a chocolate and great rolls (1 per person) from the best bakery in town (onion, sesame, rye, etc). Buy frozen or fresh cut up fruit for a fruit salad or melon boat. If you can recruit 2 Nesco roasters have one full of really good beans and one of scalloped potatoes or hash brrown casserole; if not, you want a potato and a pasta salad. Pickles, olives, onion rings and condiments are covered on the sandwich event page, I would also add some sauerkraut and about 6 pounds of sliced cheese (jack and cheddar). Slaw stays fresher than tossed salad, many good recipes on the site.

Do not forget an urn of coffee with the sodas and/or tea and/or punch.

Ellen, I work at a State Prison. We will be using the picnic tables (decorated) in the visitation area, and actually cooking on a very large grill (oil drum cut in half) I do have 2 Nesco roasters.I will look at your 100 tables.

Peggy, 40 pounds of fresh potatoes to make oven potato wedges for 100. You do NOT want to get into frying that many French fries, unless you like a hot spattery mess...

Gloria, for quarter chickens, you need 82 pounds of quarters per 100 people for 1 quarter each. 35-40 pounds of potatoes per 100; 5 #10 cans green beans for 100, but 7 is usually enough for 150; or 1 pound fresh or frozen for each 4 people.

Are you considering making these or at least some of them, yourself? You could cut your cost in half or less easily. I might use a marinated salad such as my artichoke condite instead of the plain tossed salad. Can be made ahead, great with the salmon and keeps well if nt eaten up.

Look on the quantities for 100 page, there are very complete salad listings, make or buy 3/4 of the amount for 100 for each salad. You want about 7 gallons total, 3 should be potato, 2 of each of the others.

7 pounds dried beans for each 100 servings. Meat varies; can be as little as 6-8 pounds shredded for adding a meaty flavor, up to 22-30 pounds for lots of chunks of ham or sausage. I alwways chunk in 3 or 4 heads of celery, a bunch or two of parsley and a couple of tablespoons of dried marjoram and/or dried ginger to lighten the beans and make them more digestible, as well as onions and garlic to taste. It depends on the size of the rib slabs, but allowing 1/4 chicken or 1 pound ribs, or 3 people per pound in the sausage and peppers per adult you may be a bit light in the meat department. You might calculate the number of people's worth you have and add some additional sausages- 1 pound for 3-4 servings.

Otherwise it looks good. I would definitely add a slaw, green salad, marinated vegetable salad or second veggie side dish, but I am a veggie lover.

Ellen, Thanks for the input. I have another question. I would like to cook babyback ribs the day before in the oven and finish with BBQ sauce on the grill the next day. Do I need to reheat the ribs before putting on the grill. Is this an acceptable practice or should I use a different method for cooking ahead of time.

Somewhere on this site there is a recipe for jerk ribs that is cooked the day ahead and finished on the grill day of, I think in the BBQ section , Follow this general pattern watching that you chill fast and don't leave out of the fridge long when reheating, and you will have tasty, safe ribs. Yum.

As a side dish, 6 people per pound, as a main dish 4 people per pound dry weight of pasta, a bit more if you are using one of the big ones (raddiatore, mostaciolli, etc.) 6-8 quarts sauce for 25 people- more for the thicker sauces.

Sue, look at the fruit tray page and decide how much of each you need. The info is quite extensive. Unless you have help, fresh pineapple will be a problem- slow to prepare and the acid can burn the hands after doing many. Wear gloves. Consider ading other fruits to reduce the amount. See the note on watermelons, consider the comparative ost of seedless versus your time removing all the seeds.

Donna, as long as you serve some good MANLY sides such as potato salad or scalloped potatoes and beans, 1 pound raw per person is a fine serving. If this is beyond the budget, allow 1/2 pound and 1 kielbasa or polish sausage or 4-6 ounces of smoked sausage.

sumit, I can tell you in pounds- you will have to convert to kilos. Raw, boneless chicken, you want about 1 pound for each 3 persons for a good size portion, but for a stir fry or other similar dish, 1 pound for each 4 to 5 persons is enough. For chicken quarters, you would need about 17 pounds for 1 quarter per person.

Fish is usually served in smaller portions, so 1 pound for each 4 persons is enough for fish steaks, pieces or filets. But if you buy whole, cleaned fish, it takes about 1 1/2 pounds for 4 people.

There are a lot of pasta casseroles fopr 100 posted in the website. Make 2/5 or 40%- ylu dont need to allow extra, lades don't eat as much as a mixed group. Do consider using a tri-color rotini as the pasta- very pretty in the dish and a little different.

Hi, Gavin, glad it worked for you. Caterers usually charge per person and a BBQ spread like this would probably be in the $12-14 range, maybe with the cake charged separately.

In the USA? If you could turn back the clock to the 1970's...
The US government, which cuts corners terribly in its food programs for the poor, estimates about $115 per month per adult, which is basically $4 per day, and this is considered an emergency allotment, not adequate to provide complete nutrition for anyone with special needs.
You don't say how long this is for or describe the population of eaters or the facility. It would require a full time commitment to shopping and from scratch food prep on your part to do this on a long term basis, as well as volunteer help in the kitchen. It would be mostly vegetarian menus, lots of grain and bean dishes. You would need to grow sprouts, make bread and yogurt, no tea or coffee, etc. It might be possible for a week or two if you could solicit food or money donations and/or have the men bring donations to augment the pantry. You could email with further details.

I read on one website that 5lbs makes enuf for 100, but you could also just check the label on the package. Of course it depends on what else you are serving as to how much of any one thing gets eaten. There are some interesting rice dishes on this website under Big Pots, including one rice and bean recipe.

I am serving brisket for 400 mixed adults and teens, and plan to serve pinto beans as a side. I need to know how many pounds of dried beans to prepare. I am also planning 80 pounds of slaw, along with condiments of sliced onions, sweet relish, jalapenos, and sliced dills. Please advise about condiments also.

I have several recipes for beans for 100 on a page called "Beans for 100", use any one as a quantity guide- make 4 times.

On the chili page, pickles and so forth are covered- these quantities will be close for your amounts. You might like the garlic pickles recipe there. 1 gallon of regular pickles is usually used for 100 people.

I have posted all the quantity tables I use for estimating for 100 people, so do not do initial estimates any more. If you will make your own estimates, I will be glad to check them for you and advise. For example, you need different amounts of ham for dinner, lunch, sandwiches, receptions- different amounts of fruit for dessert, fruit salad, or fruit trays- I don't know what your party plan is, but all these are covered in the tables.

Julie, this is just about enough food. I would add 1 gallon baked beans and double the chicken. The cake will make 50 servings. How about a second half sheet such as a chocolate cake or chocolate on yellow or marble? The pleasant alternative would be a selection of cookies and bars- about a hundred pieces. Check the sandwich event page for a list of condiments (lettuce, tom, mayo, etc.) needed for a sandwich bar for 100.

How much shrimp to buy for 90 people?
i'm serving shrimp for my wedding reception. how much would you suggest for 90 people? the reception is an appetizer reception. there will be appetizer sandwiches along with veggie and fruit trays as well.

Hi, as mentioned before, shrimp is one of those foods that, however much you serve, all will be eaten. That said, for appetizers you want at least 2 to about 3 ounces per person, the number of shrimps depends on the the size per pound of the shrimps you buy. For example, if the shrimps are the 21-30 per pound size, it works out to about 4 shrimps per person.

Kim this is a lot of entrees, I can only suggesst you want to end up with 1 1/2 pounds total of food per person, so divide it up according to what you know about your guests preferences. There is a good quantity list for salads at the top onf the plan for 100 page in Big Pots. Use 4/10 of the amount for 100.

Essie, about 20 pounds would be generous.

Planning for 125 for Blue and Gold Banquet
We are planning to serve Hawaiian Haystacks for a Luau theme cub scout banquet. Rice with a chicken gravy and things like cheese, pineapple, tomatoes, chinese noodles, olives, mushrooms, etc. How do I plan how much to serve. I figured, 8lbs of rice and 1/2 cup of gravy per person but the toppings I have no idea how to figure.

Marilyn, see the beans for 100 recipes for some guidance on amounts, You want at least 8 pounds ham per 100 persons,, but double that if you want nice meaty chunks and not just the presence of ham. Happy birthday , Monm.

Spebser, what kind of party? A big chili fest or a baked potato bar or a taco bar is cheap and easy, there are budget casseroles for 100 in the Big Pots section.

Jan yo probably want bar type food- chicken wings, little smokies, maybe queso dip or nachos (quweso is easier). 7 layer dip platters on antipasto platters can be done ahead and put on the tables. If veggies sneak in, it should be spinach or artichoke dip or a relish tray- olives, pickles, etc.
