I'm looking for an egg bake dish to make in the electric roaster to serve 30 people. Any ideas? I have a recipe with eggs, ham and hash browns that I make in the oven, can I also make this in the roaster???

Yes, it will be fine in the roaster, and for 30 is just the right amount for one roaster full. Preheat the roaster for 20 minutes before adding the cook pan full of casserole, and if it is refrigerated, expect it to take a few minutes longer than the oven. It will not brown. I put a clean cotton dishtowel over the casserole once it has firmed up, to keep any moisture from condensing/dripping back onto the casserole.
