Instant mashed potatoes in roaster
I am catering a wedding for 400 people.They want to have a twice baked potato casserole which calls for instant mashed potatoes, sour cream, etc. I have never made instant potatoes before. Will this casserole work okay in a roaster? Any suggestions on how to keep a good consistency?
I never use them, either. The main problem here is, you can only do 50 people's worth of this at a time in one roaster, but since you need 8 serving lines for 400 people, needing 8 roasters is OK.
