Prepping vegatables in advance of cooking

I'm preparing food for 65 people this coming Saturday and would like to prepare as much of the food as possible so it all doesn't "snowball" on me on the day of the party.
Can I clean and cut up the cabbage and store it in freezer ziplock bags in the refrigerator 2-3 days in advance of steaming it? Also, I would appreciate your advice on how and what time you would suggest cooking 10 head of cabbage. Serving time is at 6:30pm.

Yes, use stainless steel knives.
Needs to steam or simmer just 20 minutes for small wedges; allow 20-30 minutes for the water to boil before adding the cabbage.
