Assume this is a party? If self serve, I would do:
corn beef-45-50 pounds raw well trimmed
cabbage, 25 pounds whole
boiled potatoes, 35 pounds whole
carrots, 22 pounds whole
soda bread, about 1 loaf per 8
Butter 3-4 pounds
